In 1858 Antonio Mattei started producing biscotti and Italian confections in his bakery in the heart of Prato, Tuscany. He was the first to develop the recipe for Cantucci, the traditional almond biscotti we know and love. In 1904 the Pandolfini family inherited the bakery (and the award-winning secret recipe) and four generations later they continue to uphold the tradition.
