Peruvian passion fruit takes center stage in this tropical simple syrup that is a perfect complement for rum-based cocktails but also works well in the kitchen. The natural punch of tart passion fruit shines through here, and a touch of gum arabic gives the syrup a silky, luxurious mouthfeel.
Passion fruit syrup goes especially well in Tiki cocktails. Try it in a Mai Tai, Scorpion, or Zombie. For pure elegance, pour a touch of the syrup into a champagne flute and top with bubbly Prosecco. Or mocktail it up with club soda and slice of orange or pineapple. Each bottle makes between 10-17 cocktails.
In the kitchen, passion fruit syrup is nice drizzled over vanilla ice cream or tossed with fresh mango. You can also use it to flavor whipped cream or marscapone. The taste of passion fruit is a refreshing change from the citrus we're most used to.
