The sea salts of Guérande in Brittany, France, have been celebrated for their fine flavor since salt harvesting began in its marshes more than 1,200 years ago. This fleur de sel, from artisan producer Gilles Hervy, is stellar. Gilles is a man of integrity who refuses to partner with a local cooperative that occasionally supplements its stock with Portuguese salt yet continues to use the label "Fleur de Sel de Guérande." We are happy to support a true artisan who is continuing this long, hard, labor-intensive tradition.
Hand-gathered daily throughout the summer, Gilles Hervy Fleur de Sel retains its original moisture, white color and briny taste. This natural, unprocessed salt is just one day's harvest of the delicate top layer of salt (the "flower of salt") that collects on the surface of the salt ponds; the crystals are fine and moist and give off a clean ocean scent.
Use as a finishing salt — the delicate texture and remarkable taste can transform a dish. Sprinkle over sliced tomatoes, roasted meats and vegetables, salads, popcorn. Our favorite salt is sure to become yours, too.
