Conservas de Cambados sets the bar for gourmet tinned seafood in Spain. Started over forty years ago by mussel wholesaler José Luis Alfonso, his legacy of small-batch, artisanal processing is now carried on by his children, Maite and Keko. Their seafood, sourced from various parts of Spain, is purchased at peak freshness and processed by skilled artisans, mostly women, in a small factory in Pontevedra. One glance at the packaging and you'll know that this is not your average conservas. Inspired by Galician seafood nets, each tin is as beautiful outside as the contents are delicious. "Pulpo", Galician octopus, is a staple on tapas menus in Spain, often served with a crisp white wine. Not surprisingly, Conservas de Cambados has elevated this delicacy to new heights. Fresh, meaty octopus is hand-cut into perfectly sized nibbles, gently steamed, then dressed with extra virgin olive oil and just a pinch of salt. Tender and delicious straight from the tin, or give it a squeeze of fresh lemon and a dusting of smoked paprika for the true Spanish experience.
