Grilled Chicken and Tomato Bruschetta Sandwich

Ingredients:
- 4 boneless chicken breasts
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 8 slices (thin) fresh mozzarella
- 4 ciabatta rolls or sandwich rolls
- Salt and pepper to season
- Elki's Tomato Bruschetta
Directions:
- Combine balsamic vinegar and olive oil in a bowl. Season both sides of chicken with salt and pepper as desired and place on medium heat grill.
- Brush top of chicken with vinegar and oil mixture. Cook for 4-5 minutes and turn chicken. Brush with remaining oil mixture and cook for an additional 4-5 minutes or until cooked through.
- Place 2 slices of cheese on bottom half of rolls then layer with chicken breasts, Elki's Tomato Bruschetta and two more slices of cheese. Place top rolls to make a sandwich and grill both sides until toasted. Serve warm.
