Ingredients:

  • 10 oz. cream cheese, softened
  • 2 eggs
  • 1 jar Beekman 1802 Blaak Tomato Jam
  • 1 cup coarsely grated Parmesan

Directions:

  1. Beat cream cheese and eggs until smooth
  2. Stir in tomato jam & parmesan cheese
  3. Place in a 6-inch springform pan or other small round baking dish lined with parchment paper
  4. Bake at 350 degrees F for 45-50 minutes, or until center is firm.
  5. Turn off oven and let cheesecake rest with door closed for one hour.
  6. Garnish with shaved Parmesan cheese and serve with crackers or crostini.
