While the Margarita is the most well-known tequila cocktail outside of Mexico, the Paloma is likely the most popular tequila-based mixed drink in Mexico. This refreshing drink was popularized by Don Javier Corona Delgado at his bar La Capilla in the town of Tequila, who began his bartending career in 1915.

Ingredients:

  •  lime wedge and sea salt flakes, to rim the glass
  • 1-2/3 ounce blanco tequila
  • 2 teaspoon fresh lime juice
  •  grapefruit soda (such as Squirt, Ting or Three Cents), to top up
  •  pink grapefruit slice, to garnish
  •  ice cubes

Directions:

  1. Prepare a highball glass by rubbing the rim with a lime wedge, then dip the rim of the glass into the sea salt flakes.
  2. Combine all the drink ingredients in the prepared highball glass over plenty of ice.
  3. Stir to mix and chill the drink.
  4. Garnish with a pink grapefruit slice and serve at once.
